Dinner updates.

I did follow through with my 3 new meals this week!  On Wednesday, Dave’s cousin came into town so we went out to dinner (we had also ordered pizza earlier!).  Thursday I had my union meeting but cooked when I got home around 8.  I made the Cheesy Shells with broccoli.  It was not that great.  The sauce was not thick enough and it called for frozen broccoli which I never use, I almost bought fresh but decided to follow the recipe. In the recipe it didn’t give much time for the broccoli to cook, you just made the sauce, put the cooked shells and frozen broccoli into the sauce and then stuck it under the broiler for 5 minutes to let the rest of the cheese melt.  It had good flavor but not good enough to make again and try to fix.  Friday I was going to make the Chicken Noodle salad with chili dressing until I realized it was a cold salad dish.  It was freaking freezing so I did not want to make a cold salad for dinner!  So, I used the chicken breasts and made chicken burritos instead.  They turned out pretty yummy, but were mostly from a burrito kit, so that doesn’t count as a “new” meal.  I will have to save the Chicken noodle dish for when it warms up a bit.

Now I am off to find new recipes for this week!

    Bummer about the Cheesy Noodles and Broccoli. I saw that recipe on the Real Simple website and was waiting for your review before trying it. We have a similar recipe we love. Velveeta Shells and cheese, chicken, broccoli, cream of chicken and herb soup and topped with French’s fried onions. Baked in the oven for 30 minutes. Delicious. :)
